The bitterness of the walnut is caused due to the thin skin that covers them. Once you have roasted them, you should consider using a lint-free towel to rub the walnuts properly to get rid of all the skin that might be causing a bitter taste. Another reason why walnuts usually taste bitter is oxidation.

How do you fix bitter walnuts?

Place walnuts in boiling water for five minutes to remove bitter taste. Remove from water and drain, then run cold water over the walnuts.
