The fermentation process is the most critical part of the beer making process.

What is the difference between ale and lager yeast?

Ales are fermented with top-fermenting yeast at warm temperatures (60˚–70˚F), and lagers are fermented with bottom-fermenting yeast at cold temperatures (35˚–50˚F). On the other hand, lagers take much longer to ferment (up to 6 to 8 weeks) because they are cold fermented.

  5. 1/2 ounces Sorachi Ace hops – 15 minutes.
  6. 1/2 ounces Sorachi Ace hops – 5 minutes.
  7. 1 Liter starter of American Ale yeast, either White Labs WLP051 or Wyeast 1272.

How do you make Dunkelweizen?

A traditional dunkelweizen would be 50 to 70\% wheat malt, 30 to 50\% dark Munich malt and a small amount of mid-color caramel malt. By German law, at least 50\% of the grist must be malted wheat. The Munich malt adds a rich, grainy, bready malt character and the caramel malt adds a gentle note of caramel sweetness.
