Can I leave company immediately after I-140 approval?

The employer can always withdraw or request to revoke the I-140 petition. If the I-140 petition has been approved, and the I-485 has been pending for 180 days, the employer can still request to revoke the I-140 petition approval.

If your employer withdraws I140, that will end the petition. Otherwise, You can leave and get consular processing done at the time of PD becoming current. Depends on your location of adjustment of status. If in USA, can leave USA on a parole for a pre determined period.

Can I transfer my I-140 from one employer to another?

Yes you can. Your new employer have to redo labor certification (PERM) and once it is approved he has to apply for I-140 again. (If you want the green card based on this new job) As you already have approved I-140 it means your priority date is locked/saved. So when the new employer applies I-140 you can use the (old)saved priory date.
