Why did they leave out Lady Stoneheart?

According to Benioff and Weiss the the first reason they skipped out on Lady Stoneheart was thanks to a plot detail from one of Martin’s upcoming books. The final reasons the showrunning duo had for not including Lady Stoneheart was simply that Catelyn Stark’s death was just too good the first time around.

Why does Lady Stoneheart kill Brienne?

In the books, Stoneheart decides to kill Brienne because she thinks Brienne is now loyal to Jaime, rather than to the resurrected shell of Catelyn Stark. (The truth is that Brienne is searching for Sansa at Jaime’s behest, something the show would have to change, since Brienne knows where Sansa is.)

It is implied Stoneheart hanged Walder Frey’s grandson, Ser Ryman Frey, heir to the Twins, along with his whore, and the three Knights and 12 men-at-arms accompanying him. Ryman had Robb’s crown at Riverrun and gave it to his whore, but later Stoneheart is shown to possess it when she meets Brienne and her friends.

What happens to Lady Stoneheart in the books?

There are also tales of a woman called Stoneheart leading a band of outlaws different from Beric’s brotherhood. According to one story, she was hanged by Freys but revived by Beric, and now the two lovers cannot die. The mysterious woman is also known as the Silent Sister, Mother Merciless, and the Hangwoman.
