Why do servers make more than cooks?

“The more money servers earn from tips, the more customers are ultimately paying to eat out,” said Lynn. “That pressures restaurants to charge lower prices, which, in turn, makes it even harder to pay cooks.” The number of chefs and restaurateurs who are concerned about the current system is growing.

A chef may not be aggressive, may not be rude, but may still be vulgar. It is part of the culture of the kitchen, in part because it is such a testosterone charged atmosphere (heat, fire, knives, stress, adrenaline rush for hours at a stretch to get the food out, etc).
